Who said you couldn't replicate this popular Tze Char dish within the comforts of your home?



Ingredients: 
(serves 6)

- 2 tubes of Egg Tofu, cut into thick pieces
- Half a can of sliced button mushrooms
- Sliced shrimps
- Sliced dried mushrooms (Xiang gu)
- A handful of mixed vegetables (corn, green peas and diced carrots)
- Chopped spring onions (for garnishing)
- 1 clove garlic, minced
- 2 eggs, beaten
- 1/2 tablespoon Oyster Sauce
- Sugar, salt, pepper, chicken stock, corn starch
- Dark soy sauce
- Light soy sauce
- Chinese shao xing wine
- A handful of minced meat



Method:

1. Dab dry egg tofu, sprinkle with corn starch and deep fry in hot oil in non-stick pan till golden brown.

2. Remove egg tofu, drain from oil and set aside.

3. Thaw the minced meat, and marinate it for 15 min in a teaspoonful of light soy sauce, some salt, pepper and 1/2 teaspoonful of Chinese shao xing wine. 

4. Heat pan with a tablespoon oil.

5. Saute garlic till fragrant. 

6. Add in the minced meat, mushrooms, shrimps and vegetables.

7. Stir-fry for a while.

8. Add in the tofu.

9. Add in the oyster sauce, sugar, chicken stock, some dark soy sauce, salt and pepper. Alter amounts of ingredients added till desired taste is achieved.

10. Stir-fry till the vegetables are cooked

11. Meanwhile, heat up a oiled pan or hot plate (in my case, I used the pan from my toaster oven!)

12. Pour in the the beaten egg and swirl around to make sure the egg covers the whole pan.

13. Pour in the cooked tofu and vegetable.

14. Garnish with spring onions and serve immediately.
