Seared Scallops with Lemon Brown Butter Recipe

With a soft, fleshy texture, and a mildly sweet flavour, scallops are one of my favourite types of seafood. Their versatility makes it perfect to be served on its own, or complemented by other ingredients.


Ingredients:

- Fresh Scallops
- Salt, pepper and italian herbs
- Olive oil
- 1 tablespoonful unsalted butter
- Minced shallots
- 1 teaspoonful for lemon juice




Recipe:

1. Thaw the frozen fresh scallops. Dry them by allowing kitchen towels to soak up the moisture.

2. Slice both sides of scallops in a "tic-tac-toe" fashion.

3. Sprinkle salt, pepper and herbs on both surfaces of scallops. Rub the seasoning into the scallops and set aside for 15 minutes.

4. In a non-stick pan, add in some olive oil and place the scallops into the pan when oil is heated.

5. Sear the scallops on each side till it turns golden-brown and scallops turn opaquely-white. 

6. Set aside scallops. 

7. Using the same pan, stir-fry minced shallot, and add in the butter, herbs, salt and lemon juice.
8. Sprinkle the lemon brown butter over scallops. 

9. Garnish and serve. (In my case, I used mini cheese balls, thinly stripped carrots and broccoli bits.)
