Breaded Black Pepper Chicken with Cheese

Once you go breaded, you'll never go back. 

It's been a long time since I've tried out new recipes. Fried food cravings were real, but KFC is too generic, so why not tinker around and attempt a novel dish?



Ingredients:

- 8 slices of boneless chicken breast fillets (7cm x 2cm)
- A bowl of bread crumbs
- Ground black pepper
- Vegetable oil
- Salt
- Garlic powder
- Mixed Italian herbs
- 2 eggs
- 1/4 bowl of white flour
- 1/3 bowl grated parmesan cheese (or whatever cheese you prefer)


Method:

  1. In a large bowl, mix the black pepper, salt, garlic powder, Italian herbs, and flour.
  2. Whisk eggs and add a sprinkle of salt.
  3. After slicing boneless chicken breast, pat dry, coat in ingredients in the large bowl, then dip in egg. Dredge with breadcrumbs.
  4. In a skillet, heat oil over medium. When oil is sufficiently heated, add chicken to skillet. Cook for a minute, before removing chicken and coating it with the flour, eggs, and dredging with breadcrumbs again. 
  5. Continue cooking the chicken fillet till browned. (It should take around 2-3 minutes. Lower heat if it is browning too quickly).
  6. Drain chicken on paper towels when done. Sprinkle with parmesan cheese. (You may also add toppings like mayonnaise)
